So our organization purchased the full version of the plug-in, but I have been unable to access any of the options to edit any of the tables. Please see the attachment, as that what I see when clicking on any of the Display, Sorting and Filtering, Editing, Table Tools, Placeholders settings
This is very frustrating as I have tried accessing these options on two different computers, two different browsers, and two user accounts. My coworker is able to access these options on her end, so I'm completely stumped.

Issues like this usually occur when there is a conflict either with the theme currently active on your website, or another plugin you have installed.
Can you please change the theme and see if the issue is resolved? If not, then please deactivate all other plugins except for wpDataTables, refresh the page where the issue is, and see if it is resolved (it should be). If it is, then start activating other plugins one by one, and after each activation refresh the page to see if the issue reoccurred. Once it does reoccur, you will have found the plugin causing the issue.
When you say your coworker can access all these options - are they logging into the same website? If they are, it should be the same behavior in back-end. Maybe you have some permissions imposed, that are blocking your entry?
Please provide me a temporary WP-admin login for your site where this happens, so we could log in and take a look ‘from the inside’ as that’s the most efficient way to see and resolve the issue. We do not interfere with any data or anything else except for the plugin (in case that’s a production version of the site), and of course we do not provide login data to third party. You can write credentials here just check Private Reply so nobody can see them except us.
