I am not able to change the available appointment hours from the default hours. My days off go through but not the availability.

Could you please tell me are you setting up the employees' work hours? Since these hours (the employees' work hours) set the availability of the time slots on the front-end, not the company work hours in Amelia -> Settings -> Working hours.
Let me know if this helped and if you still have an issue with the time slots,
Do you have a list of plugins that are not compatible with Amelia, or have been known to cause conflicts? I'm still having no success displaying the correct availability.
