I have a gravity form that collects data and a data table to display a chart. The data from the form is in one format and needs to be in another format for the chart. I solved this problem by taking the Gravity Forms data via Zapier to a Google Sheet, doing the transform there and having a data table based on the Google Sheet.
A better solution would be to have one data table read the GF data table and do the transform. Is that possible?

That is a great workaround. Unfortunately, I don't believe what you're looking for to achieve is possible with the plugin's built-in features.
To create a table from Gravity Forms, you'd need to purchase the Gravity Forms Integration for wpDataTables add-on. It is used to link to an existing form, and display the data from that table. The plugin will pull all the data as it is being sent by Gravity's API, and there are some limitations to this integration, like - sorting, search and filtering may not work properly for tables created from Gravity Forms. Also, the formats from wpDataTables may not be properly pulled into Charts, because chart engines have their own formatting rules which are not carried over from wpDataTables.
