If you're creating a table linked to an existing Excel file, you cannot edit the table, nor can you add any columns to it. The plugin only reads the Excel file to display its data in wpDataTables.
If you import the Excel file, you can modify it, and add new columns since the plugin will create a new manual table in the database, but the newly created table will no longer be linked to the original data source.
As for this:

cant upload on page load
is there option to load on demand?
Can you please explain in a bit more detail? I don't understand what the question is here.
