Unfortunately, both Name and Last Name are mandatory fields, and that can't be changed.

However, there's a workaround provided on this ticket:

This user wanted to change the labeling of "Last Name" to "e-mail", so e-mail becomes mandatory, and then he hid the actual e-mail field (which he set not to be mandatory in main settings of Amelia), and worked around this.
