I am in the middle of installing it. I should be extremely grateful if anyone could help me out below issue.
I am trying to figure out work hours for Night Shift (21:00-07:00) but found this plugin does not provide such code yet..
However, Is there any way, after a customer chooses EMPLOYEE and DATE on the calendar,
1. Go to 'CONTINUE' directly without selecting time slot or;
2. Selecting start time only (ex. "START 21:00)

Yes, unfortunately, you can't set the work hours to be as a night shift (21:00-07:00) but you can achieve this with creating two work time periods from 21 to 24 and from 24 to 07. When you click on the pencil icon you edit that work time period and when you click on the + sign next to 'Apply to all days' you add a new work time period.
1. Unfortunately, skipping the time slot is not possible in Amelia with its current built-in feature.
2. Also, the end time must be there, but if you don't want to set one duration to services, you can create several extras for one service and then customers can choose one of the extras while booking. Would that be helpful for your use case?

However, since the customer can only select 1 time slot per calendar, "splitting from 21 to 24 and from 24 to 07" seems to confuse them.
The simple solution, if I could entirely delete the TIME (while keeping DATE), would be the better.
Is there any way, I could do that? In this sense, they could simply book "Night Shift on the 27th" rather than "21:00-00:00 Shift on the 27th and 00:00-07:00 shift on the 28th separately.

Unfortunately there isn't an option to remove the time slots in Amelia at the moment. The booking process depends on them and it would require a lot of modification of code. I will add your feature request to our list so it can be considered for implementing in the future.
You can check if you can use events for your use case, you can create them with any time and hide then the time on the front-end. But the customers can't choose employees with the events feature. You can check them out on our demo sites.
