That depends on the type of table you're creating. If you have a manual table, an imported table or an SQL query based table, then it is being done by MySQL server on your site.
If the tables are linked to an existing data source, then searching, filtering, switching pages, sorting is all done by your site visitor’s browser (with JS).

We are testing wpdatatables and need to know if the pagination is real or virtual?
We use jquery datatables ans without server side pagination is really slow to see the tables.
