I set the booking times in the settings under working hours to 2 days only, Mondays and Tuesdays, see image. The front end shows 5 days availability, see image.

If you modified the working hours after you added employees, the Company's working hours will not be applied to employees.
Please access your employees' profiles, and modify their working hours. You should see the correct times in front-end after that.
