If I understood you correctly, you want one of the services to be loaded by default on that page.

If that is true, you can use [ameliabooking service=1] to display only service with ID=1 on the page. Unfortunately, the ID is not yet displayed in the UI, so my advice would be to use the Gutenberg Editor's block - "Amelia Booking View". When you select that, you will see a menu on the far right:

There you will be able to select a specific service for the page.

I am sorry to disappoint you, but unfortunately something like this is not possible with the plugin's built-in features.

At the moment, the booking form is only loaded with blank values, so your customers can manually choose, or via shortcode - to display each service individually, as described in my previous response.
