Can we extract or download the membership or customer data of everyone who registers for our event?

Unfortunately, there isn't an option to export the list of attendees for an event in Amelia with its current built-in features. But, we have this feature in our to-do list and we will implement it in one of our future releases. I can't say exactly when that will be, though.
