In the form I create custom fields. I would like to know if it is possible to put retrieved in the contents of these fields personalized in the e-mails via shortcode?

Sure, when you access one of the templates, just expand the "</> Show Email Placeholders" list in the top right and you'll see something like this:
You can use the custom field placeholders to display what's been entered in the e-mail.
