But, once I create a link, or make a copy of the table, shouldn't be possible to define relationship with other tables? It should act like any other non-Gravity table, right?

Sorry, but unfortunately it doesn't work like that.
Gravity Forms based tables are linked to an existing data source - Gravity Form, and thus aren't being saved in the database, but instead are linking to Gravity's tables in the database to display the data. When you duplicate the table, it is still linked to the original data, so all changes you make in one table will be seen in the other, and in the form both tables were created from.

Sorry, I am not sure if I understood. Can I, or can not, use the data collected through Gravity Forms somehow like data in any other table? Or, should I abandon Gravity Forms?
Yes, and no, Dragan.
That depends on how well you know to handle data in SQL.
If you're good with SQL, you can create custom SQL queries with wpDataTables, and pull the data just like the Gravity Integration for wpDataTables add-on does. Unfortunately, we cannot provide any help with custom queries, as that's not included in the provided support for the plugin, so if you can't create custom queries which would pull the data from existing forms, there's no way of connecting Gravity Forms based tables with other tables in the system.
You may want to consider Formidable Forms - they support Foreign Key feature, so they can be connected with other tables.

Of course I assumed that must be possible by using queries. I have been using MS Access for over 20 years.
I already bought a plugin which claims to synchronize records from Gravity Forms database with WP databases' MySQL tables:
Gravity Forms - WPDB / MySQL ConnectIt's sold in Envato Market. It seems to me that WPDatatables already has exactly that functionalty. Didn't try anything yet. These days I am just shopping for software (lots of sales).
So, can I assume that in WPDatatables' query builder I will be able to see and use Gravity Forms' tables like any other table?

Awesome, if you're an MS Access user, you shouldn't have much trouble with PHPMyAdmin.
I wouldn't assume our query constructor will manage to provide necessary info. It will try to guess what you need, but you will probably need to mess around with the query to get it to display everything as it's supposed to. If it was so powerful to do that, we wouldn't have created the add-on to begin with.
