I am struggling to see if there is an option to set certain categories and services to a select day, for instance I am trying to make one of my classes only available on a Saturday?

Thank you for your purchase!
You can do this when you set the work hours for the employees - you can set different work time periods for different days and set for each work time period different service and location if you like. So , you assign the service that you want to be available on Sunday to the employee, and then in the work hours separate the services assigned for each day.
When you click on the pencil icon you edit the work hours and when you click on the + sign next to 'Apply to All Days' you add a new work time period for that day. In the dropdown for services you choose the services assigned for that time period/day.
Please note: if you leave the field empty it will mean that all services assigned to this employee will be available for this work time period.

thank you - I have edited the work hours and assigned services but now the employee (which is myself) is set as away and has no availability front end? attached screen shots.

You are welcome.
Could you please tell me have you set your city timezone in your WordPress Settings -> General? This timezone applies to Amelia as well, and if you haven't set it there this may cause a mismatch of the time slot available between the back-end and the front-end.
If you haven't set it, please choose your city for the timezone setting in your WordPress and let me know if this helped!
