How can a customer change / confirm his phone number? It should be possible on Amelia backend if he's linked to a WP user or on the frontend when making a reservation.

Or should I just add a "Contact Phone" Custom Field in order to allow them to change it for each appointment?
Hello Rui.
If you go to Amelia Settings/Roles settings/Customer, you can disable "Check customer's name for existing email when booking". That will allow your customers to enter different details for the same e-mail.

Returning to this issue...
The way the website is configured, we force customers to authenticate first through WordPress Login (the owner wants to limit reservations only to known customers) and this way, that toggle makes no difference. Probably it only works when we are logged out.
Anyway, I think that either the customer should be able to access his Amelia Customer's details at backend and change them (except for the email) or at least, should be able to insert his phone number on reservation if it's empty.

Unfortunately, you are correct, that slider checks for existing e-mails when users are not logged into WordPress. While they are logged in, there's no way of changing their data.
This is because they are being saved in the database, in wp_amelia_users table with the data they first used to schedule an appointment.
I have forwarded this to our development team, so they can work on adding this feature for one of our future releases.

Maybe just adding a switch to the reservation form that would unlock all the fields except the email (which I believe must be your key field) would be enough to let the customer edit his details...
