We have each week classes on different subjects. Is it possible for a client to make more than one booking before they are routed to the checkout page?

I am sorry to disappoint you, but unfortunately something like this is not possible with the plugin's built-in features.
At the moment, it is possible to book only one time slot during one booking session. We're currently developing a feature like that, but it will not be implemented until Q1 2020. That too should be taken with reserve, as there are many things that could go wrong during development, so we may need to postpone it a bit more.
