On my booking page - https://coconuttoursbelize.com/book-now/ each event shows "Closed" when all 24 tickets are sold and I would like it to say "Full" instead. How do I do this, please?

Thank you for your purchase.
You can change this string using POEDIT or Loco Translate easily. I can recommend installing Loco Translate, and then simply find the string "Closed" and add the translation as "Full".
You can also use PoEdit. Here's what you'd need to do:
1. Download and install POEDIT.
2. Access ../wp-content/plugins/ameliabooking/languages/en_US/ameliabooking-en_US.po file
3. Search for, and translate the string.
4. Save the translation.
That's it. After you save the file, it will be translated once you refresh the page.
