1. You can either link to an existing Google Spreadsheet, in which case the table created will not be editable, but is only used to display data from the Google Spreadsheet; or create a manual table by importing the Google Spreadsheet, in which case the table will be editable, but any changes made in the table will not be seen in the spreadsheet, or vice-versa.
If you create a table linked to the Spreadsheet, and make any changes in the Spreadsheet, it will be displayed in the table. There is a cache on the Google side, so when you update the table it might take up to 5-15 minutes to be reflected in wpDataTable. However, you shouldn't delete, rearrange, rename or add new columns in that spreadsheet because the table will break.
2. The table created in wpDataTables can be configured with the responsiveness feature, so it looks good on mobiles and tablets. How the Google Spreadsheet behaves on mobiles is something I cannot say, since that comes from Google, not wpDataTables.
3. You can disable sorting for every table you create. Editing is not possible with tables linked to an existing data source.
Curious about a few things to determine if your product fits.
1. Can updates be made on the google sheet directly and how long would the changes update on a wordpress site? Real time?
2. Will the table from a google sheet be mobile responsible from a google sheet?
3. Can the sorting function be deselected so a user on a published wordpress page could not manipulate the data?
