On long tables we'd like to display the horizontal scrollbar, but due to recent changes in Mac OS settings, the scrollbar is not present by default. Is there a way to force the horizontal scrollbar to always be displayed when viewed on Mac OS or iOS?

Can you please try adding this CSS in wpDataTables settings/Custom JS and CSS/Custom CSS field:
.wpDataTablesWrapper div.wdtscroll { overflow-x: inherit !important; }That should force the scroll to be always visible.
