I am sorry to disappoint you, but unfortunately something like this is not possible with the plugin's built-in features.
Amelia uses WordPress users to create "Amelia Employees" and "Amelia Customers" user roles. The customer user role can be automatically created if you enable that in Roles settings. However, when they log into WordPress, they would need to open their user accounts and add that info manually.
You can try installing some Membership plugin which would allow more options when creating their account, but from Amelia it is not possible.
I am not sure if this has been asked, or if I have asked already, but on the sign up form, it would be good to add additional fields.
