i need to allow someone to have full access and functionnalities to amelia, but not to the rest of wordpress admin.
so i have created a worpress account with the 'amelia manager' role, but but this does not seem to allow to cancel appointments in the back-office (the bin icon does not show on the bottom when opening appointment).
it's really important for us to have this option, do you have a solution ?
I am sorry to disappoint you, but unfortunately something like this is not possible with the plugin's built-in features.
The Amelia Manager role has almost the same permissions as an “Administrator” role, but with a few important differences. A manager is allowed hide but not delete anything, a manager cannot customize the front-end look of the plugin and doesn’t have access to the WordPress settings.
You may want to explore some user role plugins, which could assign different capabilities to different users. I cannot suggest any plugins for this, since I've never used them, but I know some of our customers have been using them successfully.

Employees can change the status of the appointment when they log into WordPress or the employee panel on the front-end. All you need to do is go to Amelia Settings/Roles/Employee and enable necessary permissions:

So "amelia_write_finance", "amelia_write_others_appointments" and "amelia_write_others_finance". We tested this briefly, and it looks like it's working.
With regards to Employees being able to change the status of a payment by adjusting the roles for employees in User Role Editor as you wrote on the 18th of October does not seem to work anymore. Could you check that on your side? Does it maybe have something to do with the new Amelia update? And any tips on how to solve this again?

We haven't changed the roles, or their capabilities, but it could be that the role reverted to its default configuration.
