My engineer is struggling to put our custom fields in the confirmation email sent to my employees (not to the client, we were able to figure out that part).
I have a custom wedding dress service; when we get a consultation, after one glance to the email, we need to know everything about budget for the dress, the bride's email, her phone number, and all the information to determine if the booking is actually accurate/ the right fit.
We receive too many appointments where the wedding is too soon, the budget is too low, or the phone number is not real. It is important that we inform clients quickly if things won't work out and delete appointments proactively from the calendar when the client is not a good match for our services. Our slots are limited, and we cannot wait until the appointment day to realize the client is a waste of time.
To achieve that, we need the information from all fields of the booking form sent to our employees' email, and not just an approved notification email for us to log into the website and check all details. We have NOT been able to achieve that; please point us towards any documentation we could use.

When you go to Amelia -> Notifications - Email Notifications you can choose two types "To Customer" and "To Employee" and when you click on "To Employee" you will get the notifications that go to the employees' so you can modify them to suit your needs. When you click on the </> Show Email Placeholders you will see all the placeholders that you can add to the email notifications that employees get. There are a lot of placeholders there for: customers' first/last name, phone number, email, etc. (when you make custom fields, services with extras, you will also see them there)
