Our business has two retail locations that have different operating hours. Is it possible to set work hours for each location individually?

Unfortunately, you can't set two separate global working hours in Amelia - > Settings. But, you can here set the working hours to cover both locations, and then when you make employees for these two locations and you set their working hours according to the work hours of both location, you will achieve what you want.
So, you set the work hours for each employee separately - you set the work hours of the employees on the first location the same as work hours of the first location, and the work hours of the employees on the second location the same as the work hours of the second location.
