I have 8 events that I'm scheduling each month, online coaching sessions for coaches that live in all four time zones, that any customer can sign up for no matter where they are in the world. How do I make sure that customers know what time the sessions are in their time zone? Is that possible? And how do I set those events up in Amelia? I don't see any time zone adjustments per event.

You should set the time zone in WordPress -> Settings and this time zone will be the same i Amelia as well. You can not set different time zones for different events. You should enable the option "Show booking slots in client time zone" if you want to show booking slots in clients' time zones.
So the customers will be able to book using their time zone and the employees can see the bookings in their time zone.

This is for events, not appointments for services. I realized I don't even need services, as all of our available offerings are events that occur at a particular date and time (but in different time zones).
And our customers are not going to the events in person, rather they are online events that anyone anywhere in the world, in any time zone can attend. It's just that our coaches, who run the events, are in different time zones.
How would you suggest we handle that for the booking list and event display? Just scrawl a note on the event in the description that it's been translated to Pacific time, but it actually occurs at a different time in the Central Time zone (as an example)?

It is the same for the events as for the services/appointments. So, you need to set up your time zone in WordPress -> Settings and enable the option "Show booking slots in client time zone" in Amelia -> Settings -> General Settings and the clients will see the event time converted to their time zone and you will see it in your time zone. If they use WordPress as well, they should also set up the time zone in WordPress -> Settings to their time zone.
