We would like the classes to be available until the end of October but not to be displayed all at once. So just have 14 days worth showing at a time.

I'm sorry to disappoint you, but unfortunately something like this isn't achievable at the moment for the events, as that is relatively new feature in our plugin.
Although, we plan to add more shortcodes soon, in one of the following updates, but I cannot say when exactly.

Unfortunately that isn't possible with the plugin's built-in features. However, you can find a changelog at this page - https://wpamelia.com/changelog/ and see when it is being added.
