1. I am sorry to disappoint you, but unfortunately something like this is not possible with the plugin's built-in features.
2. This is actually the only way a person can purchase an appointment - after they book and enter their details, they go to the payment.
As for cancelling the booking - they can simply leave the page, but unfortunately we don't have an option where you can send them retargeting emails to get them to come back. It's a great idea, though, so I'll forward it to our development team and they'll look into implementing it for one of our future releases.
