I am writing to find out if there is a way to remove the Google Hangout link and the 'Join By Phone' dial-in number from the Google Calendar event & email invite, as this information will be confusing for customers who make a booking through Amelia. I can't work out how to disable this.

I am sorry, but settings you're talking about don't have anything to do with Amelia. When you create an appointment with Amelia, it shouldn't create Google Hangout, nor "Join by phone", and that seems to be implemented by Google Calendar.
Did you create the event in Amelia, or in Google Calendar? The notifications sent with Amelia can only be sent using the predefined templates in Notifications tab.
One example of how it looks is this:
So, no hangouts, no call, only a simple e-mail containing information from the plugin. When the owner of the event goes to edit it, though, they can add these features:

Why do you think this might be generating a conference number and hangout link? Does this usually happen with Amelia Google Calendar integrations?
Do you have an example you can show me where this doesn't happen?
