How can I change the colors of the calendar. It is hard to read the light gray against the white. I also want to be able to mark a different color if the employee is requesting time off. For example White boxes are available times, dark grey boxes are times they don't normally work, black boxes are days off where they can't be scheduled and maybe light grey boxes are when they will be "on call" I am trying to make it function like something else I used to use and put a screen shot of it as well.
I see that can color code the category type of the appointment, (ie hair is purple, nails is yellow) I just also want to be able to color code the rest of the calendar for easy readability. If this isn't a feature yet it would be great if it could be!

As I understand you want to change the style of the calendar in the backend?
Correct me if I did not understand you.
Probably this can be done with some CSS, but you will need to install the plugin which will allow the CSS to apply in the backend.

I also would like to change the Light Grey time off with the white working hours on the ameila calendar. Can you please explain what plugin I would need to download to change that up? It would also be nice to see all employees schedules a month out all together then only one at a time.
