Precisely, when I create a new post for a customer (identified by his email address), I want the title of the post to be added into the column "Dates" of a table already known by the ID.

I suppose that you create table from SQL query. If that is true then you can use CONCAT function in MySQL. With which you can connect those properties from table in database.
If you what to filter all cells in table ant to replace it with custom data you can use
wpdatatables_filter_cell_val( $val, $tableId )
This filter is applied to the value of the cell before it is returned to the front-end.
$val is the cell value
$tableId is the table identifier from the MySQL table (wp_wpdatatables).
