Is there a simple way to enter custom fields in drop down options to select day, month, year and time (hours and minutes)? Also, similarly for city and country?
It would be fantastic if our consultants are able to provide this information from their birthday in (validated) fields.

Unfortunately something that you required below is not possible to achieve at the moment.
Custom fields that are available and displayed are on the Customize page and at the moment that is how they can look right now.
If you have any suggestion I will gladly forward it to my team, so we can consider adding this new features for some future updates.
