I am sorry to disappoint you, but unfortunately adding this kind of logic is not possible with the plugin's built in features.
You can add both checkboxes, make one mandatory, and the other one optional, but they will not be able to display with the given conditions. You may be able to do this with some custom work, but I've never done it, and cannot say for sure that it can be done.

In the French law, the customer has 14 days to change his mind.
To be clear, I have to create :
-> a REQUIRED checkbox "I agree to start the service before the legal delay" if the customer chooses a date between today and today+14 days
-> an OPTIONAL checkbox "I agree to start the service before the legal delay" if the customer chooses a date after today+15 days
The required field becomes optional after today+15days
Let me know how I can do this, this is a legal and obligation thing... thanks.
