Is it possible to change the calendar so that the days start on Sunday.
In other words, currently the order is M, T, W, T, F, S, S... but in America it is most common to start with Sunday so the order would be S, M, T, W, T, F, S
Please let me know if there is any way to change this.

Sure it can be changed. Amelia doesn't have any settings regarding this, but it's actually pulling that from WordPress settings. If you change it there, so the week starts on Sunday, it will be shown in all Amelia calendars:
