I am sorry, but unfortunately this cannot be done with the plugin's built in features.
If you enable "Limit table width", it will limit the width of the columns so the table will fit the screen, but the content would be either wrapped (if you enable "Word wrap"), or they will have "..." at some point to indicate there's more than currently displayed.
Another option, of course would be to collapse some columns when viewed from a mobile or tablet device.
