Is there anymore documentation that talks about this some more. I have searched all over. I feel like I can get close but I am not sure how to mark an item as completed. Or change the status from to do or done.
Do you have a sample I can look at?

Unfortunately, the only documentation about "Users see and edit their own data" is located on the link you shared with us.
Can you, please show me your setup in a private reply, and I'll help you out?
You can also provide me a temporary WP-admin login for your site where this happens, so we could log in and take a look ‘from the inside’ as that’s the most efficient way to help you out. We do not interfere with any data or anything else except for the plugin (in case that’s a production version of the site), and of course we do not provide login data to third party. You can write credentials here just check Private Reply so nobody can see them except us.

What I am looking to do is simple to start but there are other things that I would like to do ultimately with this plugin. We help companies get HIPAA compliant as a service. We want them to be able to sign up and they have a portal that lands them on a personal home page using Membership Pro Ultimate WP. I want there to be a way where we can say a short welcome message along with a check list. Membership Pro handles the creation of the page for each user. I would just need WPData Table to be able to give me a unique checkbox that someone can click Step 1 - complete, - Step 2 - Complete, - Step 3 and so on. Is that a thing??
It does not have to be as sophisticated as Cultured Code's "Things", but just some boxes that a unique user can see and check off for now.

Understood. However, wpDataTables doesn't actually have a check-box option - only through filters.
It sounds like you'd have more use of a Form plugin, such as Gravity Forms or Formidable Forms which handle these kinds of fields: steps/checkboxes/verification, and so on.
