If that is true, you can set the minimum and maximum capacity in that service settings to "1" and when one timeslot is reserved, no one else can book it:
What about if you have an Yoga room for example. And that room fits only one employee with maximum 6 students per time ? I will have to limit the number of students booking that class also. How can I do that please?
You have an option to restrict booking above maximum capacity:
If you set the service (Yoga room) to have maximum capacity of 6, as soon as that number is reached, that timeslot will close and no one will be able to book it anymore.

That could only be done if you create an employee which doesn't have any working hours assigned to him. That'll show him as "Away", and you'd need to manually create working hours for that employee for the day when he tells you he'll be present.
As for the calendar filter - You can visit the Calendar page, and filter per employee. You'll see his working hours in white, and non-working hours in gray, if that's what you're looking for.

Please provide me a temporary WP-admin login for your site where this happens, so we could log in and take a look ‘from the inside’ as that’s the most efficient way to see and resolve the issue. We do not interfere with any data or anything else except for the plugin (in case that’s a production version of the site), and of course we do not provide login data to third party. You can write credentials here just check Private Reply so nobody can see them except us.

But I think that this could be dificult in the future. Now is easy because we have two professors. But in the near future I can have 100 professors in the professor list. That would be a problem to click in each one to discover the empty time spots.
Don't you think that would be usefull if the filter "All" could show the real working hours? I mean, the hours that someone is really programed to work. So I can know what time spots are still available to offer my professors.
Could we ask that to the development team, please? To show the working ours of all people together, with just the hours that someone is going to work? Exactly like the filter for each professor.

I think I need something else.

The "All" filter selects all employees, and displays all their appointments in the given date range.
As for the red line - it is showing current time, if you're on "today" in the calendar.
