If a user has the uBlock Origins ad blocker extension installed on their browser, the datatable comes up blank.
I don't see the same thing happening when I test against your example tables. Is there an additional call I need to make or a setting in the plugin?

We haven't had the chance to work with uBlock Origins ad blocker until now, so I installed it and checked your website, and the issue appeared.
It may be linked to a conflict between another plugin or the theme you're using, since - like you said - tables on our website (and quite a few other websites where users use wpDataTables) appear normal. Here, you can take a look at these:

There are no settings in our plugin that can cause this behavior, so it's a conflict with something else, I'm sure.
Anyway, you may want to put a notification on your pages (if all else fails), that users need to add www.bluetooth.com to the uBlock's whitelist:
With it I had no issues displaying tables on your website.
