There is a two ways how they can cancel appointments.
First one is that you can set placeholder %appointment_cancel_url% in Customer notification template. Like this when they book appointment they will get notification mail with this cancel URL, and they will be able to cancel that appointment by clicking on that link.
Second one is that they can cancel appointment when they are logged in to your website as Amelia Customer. They will be able to do that if you turn on option Automatically create Amelia Customer user in Roles settings for Customer. Like this when they make booking it will be created WordPress user for them, and they will be able to log in and check their appointments.

Unfortunately that is not possible because that is rendered form stripe library that we are using for this payment system.
I figured it all out! The only question I have now is how a customer with a customer account reschedules their appointment when they are logged in. I only see the option to 'cancel'.

Reschedule option is not enabled by default and if you want to allow your customers to reschedule their appointments, first you need to go to the Roles Settings and enable the option “Allow customers to reschedule their own appointments”. After you do this your customers will be able to reschedule their appointment on their Calendar page on two ways:
By drag and drop the appointment to new date and/or time – once the customer begin with dragging the appointment he will automatically see which time slots are unavailable for the specific service and employee.
By clicking Edit on the appointment in the Calendar – once the customer clicks edit the Appointment modal will open and the customer will be able to set a new date and/or time for the appointment.
