If the appointment payment is made through amelia using paypal or stripe, will the customer receive a receipt/invoice of payment automatically from the amelia plugin?

Invoice feature is not supported in our core plugin at the moment. However, with our integration with WooCoommerce you can use these two payment methods and many more, and enable the automatic sending of invoices. More about this integration, its options and how it looks like you can read here.
