I am trying to set up a group event that has 8 sessions over 8 weeks on Wednesday only - once price for entire session. I can't see any way to block out these Wednesdays with the Event - I would like to choose which days are included in the event without over writing every other day in between. Thanks.

Thank you for your purchase.
Unfortunately at the moment we don't have implementation for Event booking, but your case can be done with Special days. You can read more about this in our documentation on this link.(look for Special days)
Like this you can make 8 sessions over 8 weeks and choosing only Wednesday.
When you made service(event) and add, time slot, capacity (for group) and price it will be related only for one day. That means if your service(event) cast 40$ when your customers book this event it will be charged only 40$. It is not possible to book all 8 sessions at the same time and it is not possible to charged from customers for all events at ones.
