Is there any way to setup a column header in 2 lines? I have several headers that are so long, and it would be great to have them this way.

Yes, this would be possible with some simple CSS.
It should look something like this:
.wpdt-c th.column-newcolumn {white-space: normal !important;
width: 200px !important;
}
Where "newcolumn" is the column's name from the database. You can see this when you open the settings of that column:
