I love your demo video - the filter feature is clear. I need a table that will show no records when first displayed. It should only show records after filtering. If the user should click "Reset" to clear filters, the default of no records should result. Is this configuration possible in your premium version?

Yes we have that functionality (Hide table), but with our add-on Powerful filters. You can find in our documentation more about this and also check live examples of tables and filters with features from this add-on on this link.

I have purchased the Powerful Filters addon and followed your link to the "Hide table" documentation.
I can not find the "hide table" setting in my version of WPTables. I am using version 2.4. What am I missing?

I am glad that you buy our premium version of wpdatatables and our add-on Powerful filters. I assume that there is some caching issue. Try to clear your server and browser cache.
If that not help then please open new private ticket in Powerful filters category and provide us temporary WP-login credentials and our agents will help you out. Please make ticket as Private so nobody can see it except us.
This is Pre-purchase category which is intended for customers that didn't buy our plugin or add-ons so far.

I have another question: Is there a way to display the data sorted alphabetically by the first column?
The original table was so sorted. But the WPDataTable is not alphabetical. It is not clear to me what information is being used to sort the table.

My suggestion is to read more about Sorting in our documentation where you can find instructions how you can sort table by specific column.
