When we try to input emails for new employees, we are receiving an "unknown type" error. This prevents us from inputting the employee as the email address is required.
It looks like that email that you insert don't have proper format for email. Can you please send me that email with which you have issue, so we can investigate in our local environment?
It is not just one email. It is any email we try to cut and paste or manually type into the email field.
To give you the context. We have created generic employees and used the special schedule function to add days/times for that schedule. Then we duplicate the generic employee and try to add the custom employee information (name, email). And this error is occurring each time.
Please provide me a temporary WP-admin login for your site where this happens, so we could log in and take a look ‘from the inside’ as that’s the most efficient way to see and resolve the issue. We do not interfere with any data or anything else except for the plugin (in case that’s a production version of the site), and of course we do not provide login data to third party. You can write credentials here just check Private Reply so nobody can see them except us.
Please provide me instructions how we can use that and try to reproduce same issue and see what is going on.

when I then try with a fake email, it allowed me to input the employee. Perhaps this is a caching issue?

Yes that is fixed in new version that is released yesterday.
My suggestion is to update the plugin manually by following these steps:
1.) Download zip from this link
2.) Use FTP to open /yourwordpressfolder/wp-content/plugins
3.) Delete existing ameliabooking folder.
4.) Upload previously downloaded ameliabooking folder through FTP to plugins folder (unzip it)
5.) Go to WP-admin panel, open Plugins section.
6.) Deactivate Amelia Plugin, and then activate it again.
7.) Clear server and browser cache
