I am sorry to disappoint You, but unfortunately this is one of the limitations of Table Tools. Their functionalities are based on a 3rd party HTML5 library.
The full list of limitations is available in our documentation, but the one referring to this issue is:
Other front-end extensions cannot be combined with Table Tools. If you have row grouping enabled for the table, or there are some customizations you did yourself, they won’t be reflected in the generated Excel, CSV or PDF document, nor in the clipboard.
It's not that You're using third party libraries or not, it's that the functionalities of Table Tools (export to PDF, export to CSV, export to Excel, print view, toggle for column visibility for front-end users, etc) are based on a third party HTML5 library.
They are not a part of our plugin, and they have their own limitations because of that. One of the limitations is that the export tools are able to export only the data currently visible on the page, and if You hide some columns like on a mobile or tablet device - they are not visible in front-end. Even when You click on a "+" sign, they do appear, but they are not recognized by that library, and therefore can't be exported.

I got around this issue by enabling the "Columns Visibility" option. If you click each column to be visible, then run your export, all fields are shown. Refresh the page and it reverts back to the original view.
Indeed, that is true. If that is feasible for MrEdodos, it is one of the options for printing the table.
However, for end users to know this, you'd have to put a notification (instructions so to speak) somewhere on the page on how to export the table with the tables that are collapsed on mobiles.
When i export the excel file or pdf in mobile, all the hidden mobile columns are not printed in the exported file

I workarround the problem by making the table scrollable. and removing the responsive.
