Now, my problem:
I have a table containing the user_id. This user_id need to be populated with the %CURRENT_USER_ID%, so I added this placeholder in the COLUMN, EDITING, PREDEFINED VALUES.
I am hiding the user_id in the table, but when the modal edit form pops up, the User_id is visible. I know I can set the column Editor Input Type to NONE, but this cause the %CURRENT_USER_ID% to NOT be populated in the table.
How can I hide the column on the MODAL POPUP and still pass through the %CURRENT_USER_ID% to the table?

I would like to see the setup of Your table.
Could You please provide me a temporary WP-admin login for your site where this happens, so we could log in and take a look ‘from the inside’ as that’s the most efficient way to see and resolve the issue. We do not interfere with any data or anything else except for the plugin (in case that’s a production version of the site), and of course we do not provide login data to third party. You can write credentials here just check Private Reply so nobody can see them except us.

This way, when we set editor input type to "none", a logged in user (in this case user 1) adds data, and it doesn't show in the modal, but it does show in the table.
If another user was to log in with user ID: 2, it would create a new row, and User column would be set to 2 for that row. Now, for You to be able to see all the users' data, my advice would be to look at our documentation and please view the video. You need to create an admin table, which would allow You to see all the data entered in this table.
I left the column visible, and added two test rows, just so that You can see how it looks. Don't forget to delete them when You're done testing.
Please check the table and let me know if this works for You.
