I need to insert a fixed text under the title and before of the table in the document that is exported (pdf and csv), with an explanation of the data in the table.
It's possible to do it? Can you give me support about it? It is rather urgent.
I am sorry to disappoint You, but what You're trying to do here isn't possible per se.
The functionalities of the Table Tools are based on a 3rd party HTML5 library. There are some limitations which You can find in our documentation.
Generated PDF, XLS, CSV are not customizable. Unfortunately, the library allows very little “fine-tuning” of the generated files, so font, size, and other properties cannot be changed (but the title can – see below).
The default export filename will be derived from the table title. To change the export filename and the displayed title, add an ‘export_file_name’ attribute to the table shortcode. For example, if you define the shortcode like:

I am sorry, but that is simply not possible with the plugin's built in features, and as I mentioned, table tools (PDF, CSV, Excel, Print and Copy) are based on a 3rd party HTML5 library.
It cannot be added to header nor footer. The only option would be to add that information in the table.
I may have gone a bit beyond the lines of support here, but I may have found a workaround for You. It isn't pretty, but I believe it should do the trick.
I created a manual table for testing purposes (see attachment 1).
As You can see, the first column is a column that will be hidden on front-end, but it serves as a sorting column which sorts the table by default. It is not set that it has to be populated, it's just there for these six lines that You need to insert, and to make them be the first rows in the table. (See attachment 2)
Next thing I did was to add conditional rules to the second column, where the information You'd like to add to the file will be store (See attachment 3).
Then, in order to hide the contents on front-end, I added some custom CSS to the plugin's main Settings page:
I also hid the first column under column settings (see attachment 4).
This is the final result in back-end:
And, the final result in front-end:
When You download the table in CSV or PDF format, You get the two files I'll attach in my next response.
As I said, it isn't pretty, but essentially it does add the data You're trying to implement in the table, without having to display that data to the user.
