Adding different opening hours for certain dates is not possible at the moment, but we plan to add a Special Days option in the future when configuring something like this will be possible. At the moment you can only add different opening hours for certain days in a week (for example, you can add different hours for Monday, but it will be shown for all Mondays). You can change working hours globally for the whole company by changing it in the Work hours settings on the Settings page, or you can change it for each employee in the Work hours tab in the Employees modal.
