I have a manual table that has a column where users should select a value from a dropdown list. The user can do this the first time, but then after the page is loaded the next time, all values can be edited except for this column. If I go into the back-end configuration of the table in WP and click the edit button, then I am able to select a new value from a dropdown list.

Hi Brad,
The issue was with the bootstrap framework.
It looks like the theme is also using the bootstrap so I disabled ours.
In the wpdatatables settings page I just unchecked Include bootstrap.js files for front end so now you whould not have any issues.
After that i applied this solution from our FAQ section.
