Yes it is possible with some custom queries. You can take a look on this link how you can do that. When you made queries that will return data that you need, then you need to make view from that query because wpDataTables server has problems with parsing of the query and building new queries dynamically (rarely happens, but does sometimes). To avoid this please prepare a MySQL view (a stored query), which will return the data that you need, call it e.g. “view1” and then build a wpDataTabled based on a simple query like “SELECT * FROM view1″.
Please note that writing queries is out of scope that we provide with standard support.

I have a table
| Food | Monday | Thursday | Wednesday |
| Banana | 100kcal | 200kcal | 300kcal |
Can I invert column with row showing:
| Food | Banana |
| Monday | 100kcal |
| Thursday | 200kcal |
| Wednesday | 300kcal |
This because all records must be in a chart ordered in this way.
