When placing a calculated column on a page the short code is returning text in front of the value (i.e. "Avg = "). Can this be removed? By definition of these short codes we already now what it is and should just have the number to format as needed.

Yes you can, but you need to modify some files in core of plugin. In file
wp-content/plugins/wpdatatables/controllers/wdt_functions.phpa reound line 505 you will find this
and there you can remove that string 'Avg =' and then your code will look like this:
Please note that this will be overwritten in next update so you will have to do it again.
