Yes you will have this option if you turn on option Limit table width on DISPLAY tab in table settings for that table.

From attachment, I can see that use option Scrollable in table settings and that is the reason why you can't see option Limit table width. You can use just one of them Scrollable or Limit table width at same time.

Yes you can add custom CSS n Custom wpDataTables CSS under the "Custom JS AND CSS" in main settings of wpdatatables.This will be affected on all tables, but if you want just for specific one then insert this code on page where is that table between the style tag.(<style>Code here</style>)

Can you send me an example of code custom for change witdh of only one column when the table is scrollable ?
I try yesterday but I don't fine which code and balise I have to use.

That is not easy to find proper solution and because of that those two options Scrallable and Limit table width can be used once at the time. You can try with this CSS below. For last line it is use class column-language which you need to replace with class from your column that you need to change and we set width of that column on 300px but you can change on value that you need. You have to turn on option Scrollable and then add this code in Custom wpDataTables CSS under the "Custom JS AND CSS" in main settings of wpdatatables.
This will be affected on all tables, but if you want just for specific one then insert this code on page where is that table between the style tag.(<style>Code here</style>)
