This is an empty editor input type; it indicates that front-end users will not be allowed to edit the values of this column, and no input would be rendered. For edited rows, this column will not be modified, for new rows, the default value will be used if provided, or a blank value will be inserted if no default value is provided.
Note that it says "for new rows, the default value will be used if provided" which is a feature I'm looking to use. However, when I set a field to None, I no longer have a default value field. Attached is a screenshot of what I see when I select "None".
Is there some way to set a default value with the "None" option?
Unfortunately that is not possible with built in features of plugin. When you set None in editor input type there is no option where you can set default value for this column. We will correct that explanation in our documentation. Thank you for reporting this.
From your documentation here:

For the Editor Input Type of None, it says:

For edited rows, this column will not be modified, for new rows, the default value will be used if provided, or a blank value will be inserted if no default value is provided.
